Spelt pasta is highly digestible, rich in fiber, antioxidants and amino acids that are retained in the product due to the 8-hour slow drying process at low temperature.
Spelt is an ancient grain, cultivated for food purposes as early as the Neolithic period, low in gluten but rich in protein. With its 340 calories per 100 grams it is very suitable for diets. Rediscovered in recent years, it is an excellent crop for marginal areas, including hilly ones, bringing jobs back to areas at risk of abandonment.
