A new range of bronze-drawn pasta is produced to meet the needs of many consumers.
From the bronze die goes the fresh pasta to take the desired shape.
Because bronze dies have a special structure, the pasta does not come out smooth like ordinary pasta but wrinkled. The roughness helps the pasta retain the seasonings, which then flavor it better.
Also for this pasta, drying takes place at a temperature of 60-65°. Times vary from 7 to 12 hours depending on the size.
