The quality of the wheat, cold milling, bronze drawing and slow, low-temperature drying give this pasta an unmistakable color, taste and texture as well as preserving all its organoleptic characteristics, allowing it to hold and enhance all sauces and dressings.
Busiata is a typical pasta format of western Sicily, probably taking its name from "busa," the knitting needle; to prepare Busiata by hand, in fact, the dough was rolled around the "busa," giving it its characteristic helical shape.
